Mash with soft French cheese, refreshing chicory and sundried tomatoes.

Ingredients for 2 pers.:

  • 500 gr potatoes
  • 2 pieces of chicory
  • ½ camembert
  • 5 sundried tomatoes
  • 100 ml milk
  • 1 tablespoon of cooking cream
  • salt and pepper
  • fresh parsley

How to prepare it:

Peel the potatoes and cut them in small blocks, wash them and put them on the stove, completely covered with water. You should wait till the water starts boiling.

Once the water boils, set the timer to 12 minutes.

Cut the chicory in half, remove the root and chop them into thin slices. Chop the camembert into small pieces. Dry the sundried tomatoes and cut them into thin slices as well.

Chop the parsley.

Check on your potatoes and rinse them down if they are done. Use a fork to mash them and stir the leek mixture through it. Add the milk and cooking cream and stir till you have a smooth mash. Add the chicory, camembert and sundried tomatoes. Stir once more. Add in need some salt and pepper. Finish off with some parsley. Enjoy.
