Mash potatoes with rucola

Ingredients for 4 pers.:

  • 1 kg potatoes
  • 120 gr rucola
  • 10 sundried tomatoes
  • A handful of pine nuts
  • 1 table spoon of crème fraiche
  • some milk
  • salt and pepper

How to prepare it:

Peel the potatoes and cut them in small blocks, wash them and put them on the stove, completely covered with water.

Chop the rucola a bit smaller and cut the sun-dried tomatoes into small pieces. Roast the pine nuts into a small baking pan, keep your eye on them because they cannot go too fast. Once they start to smell nice you need to take them off the stove. Chop them in half.

After 12 minutes of boiling you can check if the potatoes are well cone. If they are ready, drain them down. Add some milk, the crème fraiche and some salt and pepper and mash the potatoes. You can add some extra milk if needed to make it softer. Once everything is mixed well, add the rucola, the sun-dried tomatoes and the pine nuts. Stir once more and it’s ready to go.
