Lovely, slightly spicy mashed potatoes dish. Even though we are having an Indian summer this week in the Netherlands it is time for new mashed potato dishes since the fall is not far away anymore. This dish with leek and spicy mustard is already reminding me of the autumn flavours. Good match with a piece of chicken in mustard sauce. Chicken with homemade mustard sauce

Ingredients for 2 pers.:

  • 500 gr potatoes
  • 1 piece of leek
  • 1 onion
  • 1 clove of garlic
  • 150 ml white wine
  • 100 ml cooking cream
  • 2 table spoons of mustard
  • fresh basil
  • cashew nuts
  • salt and pepper

How to prepare it:

Peel the potatoes and cut them in small blocks, wash them and put them on the stove, completely covered with water. You should wait till the water starts boiling.

Once the water boils, set the timer to 12 minutes.

Clean the leek and chop it into thin slices, peel and fine slice the onion and peel the garlic. Cut the garlic in half and remove the root.

Put a frying pan with some butter on the stove. Add the leek and onion once the butter is melted. Squeeze the garlic into the pan as well. Fry everything for about 2 minutes, add the wine and let the wine evaporate. Add the cooking cream once the wine has evaporated. Bring the mixture to a boiling point again and add the mustard and some salt and pepper according to your own flavours.

Stir well.

Check on your potatoes and rinse them down if they are done. Use a fork to mash them and stir the leek mixture through it. Finish off with some basil and cashew nuts.
