Ingredients for 2 pers.:

  • 2 large chicken bolts
  • 50 gr green olives without the seed
  • fresh herbs like sage, thyme, parsley and oregano
  • 1 lime
  • 3 cloves of garlic
  • salt and pepper
  • olive oil

How to prepare it:

Pre heat your oven to 200 degrees.

Clean the chicken bolts. Use some olive oil to grease an oven dish. Place the chicken in the oven dish and season them with some salt and pepper. Cut the lime into wedges, use one wedge to sprinkle some juice over the chicken. Place the other wedges in between the chicken. Divide the olives and the garlic (in the skin) over and in between the chicken as well.

Chop the herbs and divide them over the chicken. Sprinkle some olive oil on top and place the dish into the oven for approx.. 45 min, use a bit more time if the bolts are really thick.
