Not a lot of time for cooking today but craving for some nice fish? Use this recipe! It only takes you 25 min (20 min cooking time) to create a lovely fish dish with lemon, olives and a lot of herbs.

Ingredients for 2 pers.:

  • 2 cod fillets
  • 50 gr green olives without the seed
  • fresh herbs like sage, thyme, parsley and oregano
  • 1 lime
  • 3 cloves of garlic
  • salt and pepper
  • olive oil

How to prepare it:

Pre-heat your oven to 200 degrees.

Dry the cod fillets. Use some olive oil to grease an oven dish. Place the cod in the oven dish and season it with some salt and pepper. Cut the lime into wedges, use one wedge to sprinkle some juice over the cod. Place the other wedges in between the cod fillets. Divide the olives and the garlic (in the skin) over and in between the cod as well.

Chop the herbs and divide them over the cod fillets. Sprinkle some olive oil on top and place the dish into the oven for approx.. 20 min.
