Side dish with a bit of a Mediterranean twist. I am not a huge fan of green beans but with the addition of the olives and the tomatoes it gets a completely different flavour. Very nice vegetarian side dish. Really fits well with a piece of fish.

Ingredients for 2 pers.:

  • 200 gr haricots verts
  • ½ jar black olives
  • 4 sun-dried tomatoes

How to prepare it:

Cut both endings of the haricots verts. Put them in a pan with water and heat them up. Once they are boiling, let them boil for about 5 minutes.

In the meantime, you can rinse the olives and cut them into small rings. Cut the tomatoes into small pieces as well.

Rinse down the haricots. Put a wok on the stove, add a bit of olive oil. Once the oil is hot you can add the haricots, the olives and the sundried tomatoes.

Wok them for about 5 minutes and serve immediately.
