Smooth mash with a Mediterranean twist!

Ingredients for 2 pers.:

  • 6 medium sized potatoes
  • little bit of milk
  • black olives
  • sundried tomatoes
  • fresh parsley
  • pine nuts

How to prepare it:

Peel the potatoes, cut them into small pieces and put them with a lot of water into a boiling pan. Put the pan of the stove and heat it up.

Cut the olives in thin slices, chop the parsley and cut the sun-dried tomatoes in small pieces. Fry the pine nuts in a small baking pan for a couple of minutes till they turn brownish.

After 13 minutes you can rinse the potatoes, just make sure they are soft enough to mash.

Mash the potatoes. Add the chopped ingredients and some pepper to get a soft potato mash. Add some milk if needed to smoothen the mash.
