Intense and very tasty amuse.  Due to the strong flavour of the ham, this works best in a small bite. The addition of the pommegranate is a nice refreshing surprise. A perfect small bite!

Ingredients for 8 amuses:

  • 160 gr Parma ham
  • 125 ml non-whipped cream
  • ½ lime
  • pepper

How to prepare it:

Put the Parma ham in a mixing bowl for your standing food processor. Squeeze out the lime. Add the lime juice, a bit of pepper and ¼ of the non-whipped cream. Mash the Parma ham with the food processor. Add the remaining cream in during the processing, not all at once. Since the Parma ham is pretty dry, this is a heavy job for your food processor, therefore you have to add the cream into smaller sips. In the end, you will have a soft and smooth mousse. If needed, when you think the substance is too dry, add a bit of additional cream.

The mousse is a perfect amuse, it doesn’t need a lot of additions. You can for example add a bit of pistachio crumbs and pomegranate.
