Delicious vegetarian ‘stew’! One of the benefits of cooking vegetarian and especially when it comes to stews is that it is ready much quicker then stew dishes with meat plus it is just really tasty! This specific vegetarian dish with mushrooms and a fling of anise is one of my personal favorites.

Ingredients for 2 pers.:

  • 500 g different mushrooms
  • 1 red onion
  • 1 garlic clove
  • 1 tablespoon powdered paprika
  • pickles
  • 2 tablespoons cooking cream
  • 70 ml Pastis
  • 150 g white rice
  • fresh parsley
  • salt and pepper

How to prepare it:

Peel the garlic and cut it in half. Remove the root. Peel the onion and cut it into quarters and then into thin strips. Finely chop the parsley. Cut the pickles into thin slices.

Cut the mushrooms into quarters.

Put a large casserole on the heat and melt some baking butter in it. As soon as the butter has melted, add the mushrooms and fry over high heat. Now add the onion and squeeze out the garlic, leave it for a while. Let de mushrooms simmer for about 10 minutes.

Add the pickles and parsley. Now extinguish everything with the pastis, light it and let the alcohol burn. As soon as the fire is out, add the powdered paprika and the cooking cream. Stir well

Serve with white rice.
