Sweet and full of fresh herbal flavours in the same time! I personally love the combination of fresh fruits, cheese and salads. I believe that this really supports the flavours to come to it’s best behavior.

Ingredients for 4 pers.:

  • 2 nectarines
  • 1 mozzarella bowl
  • 100 gr green salad
  • A handful of pine nuts
  • Fresh basil and parsley
  • A bit of lemon juice
  • Fresh red chili pepper paste
  • Olive oil
  • Salt and pepper

How to prepare it:

Put the fresh herbs in a mixing bowl that you can use with your standing food processor. Add some olive oil, the lemon juice, the red chili pepper paste and some salt and pepper. Mix everything until you’ve got a smooth and thin herbal oil.

Put the salad in a nice serving bowl. Cut the mozzarella into small blocks. Roast the pine nuts in a small pan on the stove until they’ve got a nice golden shiny look.

Wash the nectarines, cut them into wedges. Put a grilling pan on the stove. Make sure it’s really hot before you put the wedges in the pan. Grill them on both sides until they’ve got a nice grill stripe.

Take the wedges out of the pan, let them cool down a bit and decorate the salad with the wedges. Put the mozzarella blocks and the pine nuts on top and finish off with sprinkling the herbal oil on top of the salad.
