Azian surf & turf noodle soup!

Ingredients for 4 pers.:

  • 300 gr beef
  • 300 gr shrimps
  • 1 stump paksoi
  • 1 stump white cabbage
  • 1 pointed pepper
  • 1 clove of garlic
  • 1 red chili pepper
  • 3 spring onions
  • 1 lime
  • 1.5 l chicken broth
  • dried onions
  • 500 gr noodles
  • fish sauce
  • soy sauce
  • fresh ginger

How to prepare it:

Remove the leaves of the paksoi, cut the leaves smaller and keep them separate. Chop the stump into bite sized pieces. Cut the pointed pepper into small blocks. Cut the chili pepper in half, remove the seeds and chop the chili pepper. Chop the cabbage and the spring onions.

Chop a piece of 2 cm of the ginger, peel of the skin and put it aside for a moment. Peel the garlic, cut it in half and remove the root. Put the garlic aside as well.

Cut the beef into thin bite sized slices.

Put 4 pans on the stove; 1 for the soup, 1 for the noodles, a frying pan for the beef and a frying pan for the shrimps.

Put some oil in 3 of the pans and water for the noodles in the 4th. Start by baking the garlic and the red chili pepper into the soup pan. Grate the ginger and the lime skin on top as well, squeeze out the lime juice, add it and bake everything for 3 minutes before adding the stump of the paksoi and the pointed pepper. Bake for another 3 minutes and add the chicken broth. Cook the soup.

Heat up the pans for the shrimps and the beef, add them once the pans are hot. Add some pepper to both and start frying. Fry the beef on both sides for about 2-3 minutes and remove them from the pan, wrap them in a thin foil so that they stay warm.

Let the shrimps simmer on whilst stirring once in a while.

Heat up the water for the noodles. Check the boiling soup and add the cabbage and the paksoi leaves. Make sure it starts boiling again.

Taste the soup and add a bit of fish sauce and soy sauce.

Start by prepping the plates; once the noodles are ready you can drain them. Put some noodles into the bowls, divide the beef, shrimps, dried onions, spring onions onto the plates.

Finish by adding the soup into the bowl.
