Stass’s recipe with a taste of the original French onion soup. Traditional flavours with a small twist.

Ingredients for 3 liter soup:

  • 8 big onions
  • 1.5 l vegetable stock
  • 150 ml white wine
  • fresh thyme
  • 1 baguette
  • 150 gr gruyere

How to prepare it:

Peel the onions and cut them into small rings. Take the leaves of the thyme of the twig and mince them if needed.

Put a soup pan on the stove. Add some butter, once the butter is melted, add the onions. Fry the onion on a hot stove for about 5 minutes. Stir regularly. After 5 minutes you can add the thyme. Keep stirring and bake the onions for another 5 minutes.

Add the white wine, turn up the heat till the wine starts to boil and let the wine boil for about 5 minutes whilst you keep stirring. Now you can add the vegetable broth, stir again and heat up the stove. Once the soup is boiling, put the lid on the pan and let is boil for 20 minutes. Have a taste and check if the onions have become soft.

In the meantime; Bake the baguette and cut some nice thin slices of it. Put the slices on the griddle, cover them with some Gruyere and thyme leaves. Put the slices into the grill for 3 minutes.

Taste the soup, personally I don’t think that the soup needs any salt and pepper but everybody has a different taste. Add some salt and pepper if needed.

Poor the soup into the serving bowls and put a slices of grilled bread on top of the soup.
