We’ve been very busy the last couple of weeks but unfortunately not with cooking or blogging. We just settled down into our new home and I’m completely happy with my new kitchen! We just got rid of the old stove, the oven didn’t work anymore and it was just getting way too old. She served the family for 20 years but now she was just done. The first thing that I tried out in my new kitchen was the oven. My pizza plate fits, so that’s a good sign.
The first dish that I made in the oven is this oven dish with cod fish. After the move I had some time to visit the fresh market and I got some fresh cod. Delicious! This tastes so much better than the fish from the supermarket. You’ll find the recipe below.
The dish fits perfectly with some smooth and creamy mash potatoes.
I know it’s been quiet on my blog lately but I’m still full of inspiration so stay put and I’ll make it up with you in the coming period.
Ingredients for 4 pers.:
- 600 gr codfish
- 1 zucchini
- 250 gr cherry tomatoes
- 3 spring onions
- 250 ml cooking cream
- juice from ½ lime
- grated young cheese
- salt and pepper
How to prepare it:
Preheat your oven to 180 degrees.
Start by greasing the oven dish with some oil or butter. Put the pieces of cod, with the skin on the bottom into the oven dish. Sprinkle some lime juice (not everything, we need some more later on), salt and pepper on top of the cod.
Cut the cherry tomatoes in half, fill up the blanks in between the cod fish on the bottom of the oven dish. Cut the zucchini into thin slices and put the slices on top of the zucchini and the tomatoes. Poor the cooking cream into a small bowl. Add some salt, pepper and the left over lime juice and stir well.
Chop the spring onions into small slices and sprinkle on top of the zucchini. Poor the cooking cream on top as well.
Finish off with some grated cheese.
Put the dish into the preheated oven for 25 minutes.
