Lovely fish oven dish for the cold winter evenings. Nice combination of tastes, with the soft zucchini and John Dory, the spices of the herbal cheese and the creamy mashed potatoes.

Ingredients for 2 pers.:

  • 2 John Dory fillets
  • 500 gr potatoes
  • 1 zucchini
  • 150 gr ricotta cheese
  • fresh herbs like parsley, basil and chives
  • salt and pepper
  • ½ lemon
  • powdered paprika
  • 1 clove of garlic
  • mik

How to prepare it:

Pre-heat the oven to 220 degrees.

Schil de aardappels en snijd ze in kleine blokje, was ze en zet ze met een flinke hoeveelheid water op het vuur. Als het water kookt, laat de je de aardappels ongeveer 12 min koken.

Chop all the fresh herbs and squeeze the juice from the lemon. Mix the herbs, the powdered paprika, cheese, lemon juice, salt and pepper.

Sprinkle some salt and pepper on both sides of the fish and put them in a greased baking dish. Use your mandoliner or a very sharp knife to cut the zucchini into thin long slices. Cover the fish with a layer of zucchini and add a layer of herbal cheese on that. Make sure it’s spread all over the zucchini in a thin layer. Add another layer of zucchini. Sprinkle a bit of olive oil on top and put the dish in the oven for 15 minutes.

Check the potatoes by poking them with a fork to see if they are done, if there is not much resistance you can drain the potatoes. Add some milk, the crème fraiche and some salt and pepper and mash the potatoes. You can add some extra milk if needed to make it softer.

Get the fish from the oven and cover the zucchini with a layer of mashed potatoes. Put some blocks of butter on top and put the dish back into the oven for another 15 minutes.

It should be nice, a bit crispy and brown-gold coming from the oven. Enjoy!
