In the Netherlands we’ve got a system that’s providing tips from the health department about the differentiations and variations you need regarding nutrition. Last week they published a new advice and that made me really happy; the new idea is actually not that much different than the old one but it mainly states that you need to eat healthy, fresh and with a lot of variety. As a human being you need a differentiation of nutrition that can help you through the day and as long as you vary them and stop eating once you have enough, there is not much that can go wrong.
One of the tips they are now supporting is to eat more fish and I love it! Fish, delicious, very tasty and easy to prepare (at least that’s what I think). I do often notice that people are less creative when it comes to fish than they are with meat. So, I’m here to help!

When you wrap a nice white fish into some foil, there is not a lot of flavours you need to add but a lot you can add! The wrapping makes sure that the fish sizzles equally, it remains moist enough and it will make sure that the additional flavours really get into the fish. I personally really enjoy the flavours below but as mentioned, you can add whatever you like.

Ingredients for 4 pers.:

  • 4 panga fillets
  • 2 tomatoes
  • 2 pointed peppers
  • salt and pepper
  • olive oil
  • fresh basil

How to prepare it:

First of all, please turn on the oven at 200 degrees and let it pre-heat.
Pat the fish with a cloth or some kitchen wipes until it’s dry. Prepare a piece of tin foil per fish, it needs to be approx… 10 – 15 cm larger than the fish (on all sides). Pour some olive oil in the middle, and spread it so it covers the entire bottom of the fish. Lay the fish on top of the oil.
Sprinkle some sea salt en pepper on top of the fish. Cut the tomatoes and pointed peppers in thin, slices. Make sure that you remove the seeds of the pepper. Cover the fish with the tomatoes. Put the peppers on top of the tomatoes. Cut the basil in small pieces. Sprinkle the basil on top of the fish. Fold the tin foil lengthwise and roll both pieces together, don’t make it too tight, the fish needs to be able to breathe! Fold both short sides as well so the package is closed now. After about 20 minutes in the oven your fish is well done. Enjoy this simple but very tasty dish!
Tip: the fish is really good if you combine it with a fresh risotto based on lemon or tomatoes and basil.
