Since I’m not eating meat, I always try to be creative with dishes based on fish and flavours that match well with it. I really like fish-stews but unfortunately my boyfriend is not a big fan of sauces. Therefore we often eat fish packages. By wrapping the fish with tin foil, the fish can really adopt the flavours of the other ingredients and the fish will stay soft and full of flavours without a lot of sauce. Plus: it also looks nice!

I always like to make myself useful, I think it’s hard to sit quietly and have other people do the work. That’s why I’m always happy to help out and advise in the kitchen.

The very first time that I’ve created fish-packages, I created them together with my mother-in-law, it was years ago. My mother-in-law is a member of a cooking association and we regularly share our passion for cooking together. With a nice glass of red wine, we just sit in the kitchen and talk about new recipes or new restaurants we recently visited. We often come up with new ideas; like creating this fish package.

The very first time we created the package we solely used the sun-dried tomatoes and fresh basil. Just for a bit of a stronger bite I’ve recently added the black olives.

The fish I usually use for this is either panga, salmon or tilapia. The tilapia fish is a bit more solid and the panga is a nice white and light fish, therefore this is my favorite. My advise is to buy your fish fresh and not deep-fried, as the taste is always a bit better when you use fresh fish.

Ingredients for 4 pers.:

  • 4 panga fillets
  • fresh basil leaves
  • 8 sun-dried tomatoes
  • ½ jar of black olives
  • olive oil
  • pepper & salt

How to prepare it:

First of all, please turn on the oven at 200 degrees, because the fish needs to be in there for about 20 min.

Start by drying the fish with a cloth or some kitchen wipes. Prepare a piece of tin foil per fish, it needs to be approx… 10 – 15 cm larger than the fish (on all sides). Pour some olive oil in the middle, and spread it so it covers the entire bottom of the fish. Put the fish on top of it.

Sprinkle some sea salt en pepper on top of the fish. Chop the basil and cut the sun-dried tomatoes in small blocks and sprinkle this on top of the fish. Cut the olives in little slices and add them on top of the fish as well. Fold the tin foil lengthwise and roll both pieces together, don’t make it too tight, the fish needs to be able to breathe! Fold both short sizes as well so the package is closed now. After about 20 minutes in the oven your fish is well done. Enjoy this simple but very tasty dish!

Tip: the fish is really good if you combine it with a fresh risotto based on lemon or tomatoes and basil.
