Rouille (Aioli with red peppers)
This rouille is a typical side dish for the French Bouillabaisse, combined with fresh toasts covered in olive oil and garlic. Besides that this is a lovely mayonnaise that works really well with homemade French fries and a nice steak.

Making your own fish broth is really easy, it just takes a bit of patience as the broth gets better the longer you leave it on the stove. In this recipe we let it evaporate 1.5 liters in 3.5 hours. After that you have a perfect base for a kinds of fish recipes.
