Avocado, smoked salmon and fresh home made pasta…it felt like heaven the first time that I ate this combination. We all know that avocado and smoked salmon work perfectly together, a match made in heaven. But honestly I have to admit that when I thought about the recipe I was a bit afraid that it would fail. I’ve not used avocado in warm dishes a lot and I wasn’t sure if it would work out or taste nicely. I wasn’t disappointed at all!!! The soft combination of the avocado sauce and the fresh pasta with the baked smoked salmon!!! Delicious.

Ingredients for 4 pers.:

  • 200 gr pasta flour
  • 2 eggs
  • Olive oil
  • Sea salt
  • Pepper
  • 2 avocado’s
  • ½ red chili pepper
  • 1 clove of garlic
  • ½ lemon
  • 125 ml cooking cream
  • 200 gr smoked salmon

How to prepare it:

As with all my pasta recipes, I’m making the pasta myself but I’ll also note down in the recipe when you can start cooking the pasta.

If you are making fresh pasta start with prepping the pasta dough. Take 200 gr of pasta flour and mix this (in you food processor) with 2 eggs and a dash of salt. Once the dough is becoming a nice boll, you put the dough in a bowl in the fridge. You can already put a pan with water on the stove, do the same when you are using dried pasta.

Cut the avocados in half, remove the seed and put the pulp into your food processor. Cut the red chili pepper, remove the seeds and chop the pepper. Add it to the avocado. Squeeze out the lemon and add the juice as well. Peel the skin of the garlic, cut the garlic in half, remove the root and squeeze the garlic into the food processor. Add some salt and pepper to your preference. Mix everything with your food processor and slowly add the cooking cream. Once the sauce becomes smooth and soft, taste once more to see if you need to add some additional salt and pepper.

If you are using dried pasta, you can add that to the boiling water now.

Put a small frying pan on the stove. Add some butter and chop the smoked salmon smaller. Add the salmon to the frying pan, bake the salmon for about 5 min whilst stirring once in a while.

Now that all ingredients are ready to be used, it’s time to start prepping the pasta.

Make sure your countertop is clean and dry so to roll out the pasta dough. Cover your countertop with some flour and roll out the pasta dough until you can cut it into pieces that fit into the pasta machine.

Pull the pasta sleeves approx.. 3 times through the pasta machine. For this dish I’ve used tagliatelle. So once the sleeves are thin enough you can take them through the tagliatelle shaper. After this, hang them on your drying rack.

Add sea salt and olive oil to the boiling water. Put the fresh pasta in the pan. It needs to boil for 5 minutes.

As soon as the pasta is ready, rinse it down and add it to the avocado sauce. Stir well so that the pasta is completely covered with avocado. Put the pasta on the plates and add the salmon on top.
