It’s time for tip #2: My second tip will make your life in the kitchen easier. As you’ve noticed I always make fresh pasta. It sounds complicated and time consuming but believe me if you’ve tried it a couple of times and you’ve got the right tools it gets easier. And it tastes sooo much better! But you do have to practice the skill and most important: make sure you’ve got the right equipment.

I started as an inexperienced pasta maker as well, never considered a drying rack for the pasta. So the first time I just put up a rope on top of my stove to dry the pasta. You can imagine this wasn’t the greatest success. A couple of years later I tried several types of drying racks and I finally found my favorite! It’s a wooden drying rack (see picture) that you can easily fold up and put away. It doesn’t use a lot of storage space. Because it’s made of wood, the pasta doesn’t stick to it, it’s easy to clean and it can hold all types of pasta from lasagna to spaghettini. I bought my own version at Dille & Kamille.
