Fresh and tasty summer pasta dish. Perfect as a salad addition to your BBQ party, a lunch in the park or during a picnic at the beach. Easy to make up front and take with you during your summer stroll.

Ingredients for 4 pers.:

  • 200 gr farfalle pasta
  • 1 avocado
  • 2 pomodori tomatoes
  • 1 mozzarella
  • 1 red onion
  • ½ lemon
  • salt
  • fresh black pepper
  • olive oil

How to prepare it:

Put a pan with water to boil the pasta on the stove. Boil the pasta according to the description on the package.

Cut the avocado into small pieces, squeeze out the juice of the lemon and add this to the avocado in a bowl. Boil some water to take of the skin of the tomatoes. Make a small cross in the upper skin of the tomatoes and put them in a bowl. Poor the cooking water over it. You’ll see that the skin of the tomatoes is coming loose from the tomatoes; drain down the water and just rinse the tomatoes with some really cold water. Peel of the skin, take out the pulp and cut the tomatoes in small blocks.

Once the water is boiling you can add the pasta.

Chop the onion and the mozzarella.

Rinse down the pasta, add a bit of olive oil, the avocado, the tomatoes and the onion. Stir everything well. Add some salt and pepper. The pasta can be served cold or lukewarm.
