Delicious low carb fish dish!! Perfect early spring dish!

Ingredients for 2 pers.:

  • 300g catfish
  • 200g green asparagus
  • 1 spring onion
  • 1 avocado
  • 1 egg
  • 1 lime
  • fresh basil
  • olive oil
  • red wine vinegar
  • salt and pepper
  • 100ml white wine
  • 100ml fish stock

How to prepare it:

Preheat the oven to 200 degrees. Season the catfish fillet with some salt and pepper. Put the white wine and fish stock in an ovenproof dish, place the fish in it and cover with a foil. Put the fish in the oven for 15 minutes (check if it is cooked afterwards otherwise it can be cooked for another 5 minutes, this depends very much on the thickness of the fish).

Put a small saucepan on the heat. Finely chop the spring onion and put it in the pan with some olive oil, red wine vinegar, salt, and pepper. Simmer for 2 minutes and remove from the heat.

Put the avocado with the braised spring onion and some fresh basil in a cup for your hand blender. Put an egg on this. Mix with the hand blender, pour in some oil regularly until you get a mayonnaise structure.

Put another small pan of water on the heat, boil the asparagus in it for 5 minutes.

Serve the asparagus with the avocado mayonnaise and poached catfish fillet.
