Poaching fish is a perfect way to keep the taste of your fish optimal. It remains smooth and the fish does not dry out. The ricotta – spinach sauce adds a nice smooth flavour.

Ingredients for 2 pers.:

  • 2 tilapia fillets
  • 100 gr spinach
  • 50 gr ricotta cheese
  • fresh parsley
  • pine nuts
  • 500 ml fish broth

How to prepare it:

Start with the preparation of the ricotta-spinach sauce. Cut the spinach into smaller pieces. Place them in a bowl for your mixer or food processor. Add the ricotta and some pepper and mix till you have a smooth green sauce.

Once the sauce is ready, you can start poaching the fish. Place a deep baking pan on the stove, add the fish broth and bring the broth to a boiling point. Once the broth is boiling you can add the fish, place it completely into the water. Poach the fish for about 5 minutes, depending on the thickness of the fish.

Place the fish on the plates and divide the sauce over the fish, finish with some fresh parsley and pine nuts.
