It’s 7:30 PM, you are rushing home and then you discover… you forgot to defrost tonight’s dinner…and now what? Shall we go and get some french fries or shall I try to combine some left overs? Left overs it is! And I loved it! Pointed peppers with feta cheese and olives; very tasty!
Ingredients for 4 pers.:
- 2 pointed peppers
- 100 gr feta cheese
- Black olives
- Fresh parsley
- Pepper
- Olive oil
How to prepare it:
Chop the head of the pointed pepper. Cut the peppers in half. Remove the seeds and put the peppers in a pre-greased oven dish.
Grate the feta, cut the olives into small rings and chop the parsley.
Divide the feta and olives over the peppers, sprinkle a bit of parsley and some fresh pepper and olive oil on top.
Put the pointed peppers in the grill for 10 minutes.
