A perfect cheerful and colorful side dish for the summer. You can prepare this side dish perfectly in the oven grill but in the summer it also works on the BBQ. In that case you can just put the peppers on a piece of foil.

Pointed peppers filled with mozzarella and homemade pesto

Ingredients for 4 pers.:

  • 2 pointed peppers
  • 1 boll of mozzarella
  • 15 gr fresh basil
  • 1 clove of garlic
  • a handful of pine nuts
  • ½ lemon
  • 40 gr Parmesan cheese
  • olive oil

How to prepare it:

Chop the head of the pointed pepper. Cut the peppers in half. Remove the seeds and put the peppers in a pre-greased oven dish.

Cut the mozzarella into thin slices and put the slices in the peppers. Now you can make the pesto.

Take the leaves of the basil and put them in the blender. Strip the garlic and cut out the root. Squeeze the garlic over the basil. Add half of the pine nuts. Squeeze out the juice of the lemon and add the juice to the blender. Add a sip olive oil and mash everything. Once a nice paste has emerged you can add the parmesan cheese, mix everything once more.

Divide a bit of the pesto on top of the mozzarella, sprinkle some pine nuts, fresh pepper and olive oil on top.

Put the pointed peppers in the grill for 10 minutes and you’re done, enjoy!
