Yesterday I realized that it’s been almost a year that we started talking about starting a foodblog. And currently there are already over a 100 recipes online. I just scrolled through the blog and noticed that the amount of recipes with meat are lacking a bit. So I am going to work on this. I believe that the below recipe is a good start.

You will learn to cook a perfect piece of pork tenderloin filled with a wild mushroom and herbs filling. The recipe is not difficult and it’s perfect to make and serve during a family and friends dinner.

Ingredients for 4 pers.:

  • 400 gr pork tenderloin
  • 100 gr wild mushrooms
  • 1 clove of garlic
  • fresh parsley, sage, chives and rosemary
  • olive oil
  • powdered chili pepper
  • salt and pepper

How to prepare it:

Chop the fresh herbs, cut the mushrooms into very small pieces. Put a frying pan on the stove. Add a sip of olive oil. Peel of the skin of the garlic, cut the garlic in half and remove the root. Squeeze the garlic into the olive oil and add some powdered chili pepper. Add the mushrooms and let them fry for a couple of minutes. Add the fresh herbs after about 3 minutes. Fry the mixture for another 5 minutes, stir a couple of times.

In the meantime you can prep the tenderloin. Put the meat on a plate. Use a sharp knife to make a long and deep cut into the meat. Make sure that you stay about 5 mm away from the sides.

Fill the tenderloin with the mushroom mixture. Use some cooking rope to close the tenderloin (Unfortunately mine was finished so I’ve used some wooden sticks to close the meet but actually a bit of rope is easier to bake and looks better.) Rub some salt and pepper on the outside of the tenderloin. Add some butter to the frying pan and put it back on the stove.

Pre-heat your oven to 150 degrees.

Put the tenderloin into the frying pan once the butter is melted. Fry the tenderloin for about 5 minutes. Make sure that all sides are evenly baked.

Take the tenderloin of the stove and put it into a baking dish. Put the tenderloin into the heated oven for 15 minutes.

After 15 minutes you can take the tenderloin out of the oven, remove the rope or the sticks and cut the tenderloin in small slices.
