Fall is coming, time for mushrooms! I love the warm and well flavoured taste of mushrooms in all ways and forms. Hereby and easy starter or lunch dish!

Ingredients for 2 pers.:

  • 2 portobellos
  • 50 gr bacon
  • fresh thyme
  • fresh basil
  • olive oil
  • pepper

How to prepare it:

Pre-heat your oven, using the grill option. The Portobello’s need to be grilled for 20 min.

Take an oven dish and grease it with some olive oil. Cut (if needed) the stipe off of the mushroom and grate the gills with a spoon gentle of the cap. Put the Portobello’s into the oven dish and poor a bit of olive oil in them. Divide the oil over the Portobello, this will make the Portobello soft and juicy. Put a branch of thyme in the portobello, so the taste can really get into the portobello.

Put the portobello into the grill for 15 min. Put the bacon next to the portobello in the grill.

In the meantime, you can chop the mozzarella into small blocks and fine slice the basil.

Take the bacon and portobello out of the oven. Remove the thyme. Fill the portobello with the mozzarella and the basil. Add some pepper and break the bacon on top.

Put the portobello back into the oven for 5 minutes.
