Delicious vegetarian dish. Portobello is a great replacement for meat and forms a great combination with spinach and ricotta cheese.

Ingredients for 2 pers.:

  • 2 portobellos
  • 200 gr fresh spinach
  • 1/2 red chili pepper
  • 2 tablespoons ricotta
  • fresh pine nuts
  • tomato passata
  • 100 gr mixed mushrooms
  • 1 garlic clove

How to prepare it:

Preheat the oven to 200 degrees.

cut the stem out of the portobellos and remove the seeds. Remove the seeds from the red pepper and finely chop the red pepper. Peel the garlic, cut it in half. Remove the root. Finely chop the spinach and mushrooms. Put a frying pan on the heat. Put some oil in here and let it get hot.

Add the chopped mushrooms, red pepper and squeezed garlic. Bake for a few minutes. Now add the spinach and let it dwindle. As soon as the spinach has shrunk, add the ricotta.  Stir well and fill the portobellos with the spinach.

Pour the tomato paste into the bottom of an ovenproof dish. Pour in a splash of olive oil and cover the bottom with the passata and olive oil. Now place the portobello on the passata and sprinkle with pine nuts.

Place the portobello in the oven for 15 minutes.

Serve warm.
