The side dish presented below is not really healthy but it does taste really good! It always reminds me of one of the first times I was having tapas in Spain. Sitting on a terrace in the sun with a nice glass of white wine, enjoying all those small dishes you could share together. I’m getting hungry immediately. Usually I’m not a fan of boiled potatoes but the new small potatoes have much more flavour, especially because you don’t peel of the skin. The combination with the garlic sauce (aioli) is one of my favorites.

Ingredients for 4 pers.:

  • 1 kg of new potatoes
  • yolk of 2 eggs
  • 2 cloves of garlic
  • 1 table spoon of mustard
  • juice of ½ lemon
  • olive oil
  • sunflower oil
  • fresh parsley
  • salt and pepper

How to prepare it:

Rinse down the potatoes but leave the skin on. Check them for some bad area’s or roots coming out. Put the potatoes with water in a pan and put them on the stove.

Make sure the water starts boiling and once it’s boiling the potatoes need to cook for 12 minutes. In the meantime you can make the aioli (garlic mayonnaise).

You can make the aioli by hand or you can use the food processor. Both will work however the food processor is much quicker and easier. The most important thing is to add the oil in small shoots so that the sauce that is forming will get thick, airy and smooth. Take the eggs and split out the egg white and egg yellow (yolk). You are only using the yolk: put this in a bowl that you can use with your food processor. Cut the garlic in half and take out the root. Squeeze out the garlic within the yolk. Add the lemon juice, the mustard, a shoot of olive oil, some salt and some pepper. Mix everything well, either by stirring with a whisk or by using your food processor. Once everything is mixed well, you can add a bit of sunflower oil. Mix it again, add another bit of sunflower oil, keep stirring and adding sunflower oil until a thick and smooth (but airy) mayonnaise exists.

Taste if the aioli has a good taste and add some salt and pepper if needed.
Chop the parsley.

Once the potatoes are cooked, rinse them down and put them in a serving bowl. Pour the aioli on top and sprinkle the parsley on top of the aioli. You are ready to serve.
