Wraps with pulled salmon, perfect dish for your warm, summer night. Easy to make and delicious to eat outside in the garden!
Ingredients for 2 pers.:
- 300 g salmon
- 6 wraps
- 150 g cherry tomatoes
- 1 lemon
- 1 avocado
- fresh mint
- salt and pepper
- powdered paprika
- 1 mozzarella
How to prepare it:
Cut the cherry tomatoes into quarters and put them in a casserole with some olive oil and sea salt. Place the tomatoes under the grill for 10 minutes.
Cut the avocado over half, remove the kernel and put the flesh in a hand blender. Add the mint. Squeeze out the lemon and add the juice to the avocado. Add some salt and pepper to taste.
Mix everything into a smooth sauce.
Put a frying pan with some butter on the heat. Sprinkle the salmon with some salt, pepper and paprika. Place the salmon in the frying pan as soon as the butter has melted and fry well on all sides (about 10 minutes in total).
Cut the lettuce into thin strips. Cut the mozzarella into slices. And prepare the wraps according to the instructions on the packaging.
Remove the salmon from the pan and pull it apart with two forks so that you have small salmon strips.
Now you can fill the wraps. Place a spoonful of salmon on each wrap, some tomatoes, some avocado mint cream, a slice of mozzarella and then some lettuce.
Close the wraps and enjoy!
