Mexican quesadilla with tuna and a yogurt dip. Perfect for a nice lunch or served in small bites.

Ingredients for 2 pers.:

  • 8 wraps
  • 1 can of tuna
  • 1/2 red peppers
  • 50 gr cheddar
  • 2 tablespoons yogurt
  • 1 tablespoon mustard
  • fresh parsley
  • 1 spring onion
  • 5 pickles
  • lemon juice
  • salt and pepper
  • powdered pepper

How to prepare it:

Drain the tuna and loosen them in a bowl, add a little yogurt, lemon juice, pepper, salt and paprika. Stir well. Cut the peppers into small pieces. Chop the spring onion into narrow rings. Rasp de cheddar. Finely chop the parsley.

Lay the wrap on your grill (or in a clean baking pan), divide tuna over the wrap, start in the middle and release a rim at the ends. Sprinkle some paprika, parsley, cheese and spring onions over it. Place a second wrap over the first round and close the grill. Grill the whole for about 8 minutes.  If you bake the quesadilla in a pan you lay a pans lid that is just slightly smaller than the pan on the wraps. Also now bake the quesadilla for 8 minutes.

Now you can prepare the yogurt dip.

Put the yogurt, the mustard, some finely chopped parsley, some salt, pepper and lemon juice in a bowl. Chop the pickles small and add them too. Stir everything well.
