Delicious and easy rolled roast. Easy to make but it takes some oven time, which is actually perfect as this gives you time to interact with your guests. Serve with small potatoes with rosemary from the oven! Enjoy.

Ingredients for 2 pers.:

  • 300 gram tenderloin
  • 1 lemon
  • fresh parsley
  • 50 gr unsalted pistachio nuts
  • 50 gr Parma ham
  • pepper to taste

How to prepare it:

Preheat your oven to 200 degrees.

Chop the parsley and the pistachio nuts. The pistachio nuts should not be too small. Grate the skin of the lemon and chop it finely if necessary.

Place the tenderloin your countertop. Season both sides with some pepper to taste.

Cover the inside of the tenderloin with the Parma ham. Sprinkle the pistachio nuts, the parsley and the lemon zest over it.

Roll the tenderloin and tie it with some kitchen rope. Put a baking pan on the stove. Briefly bake the roast on all sides. Place the roast in an oven tray and add the baking grease to it. Cover with aluminum foil and put the roast in the oven for about 45 minutes. Take the roast out every 15 minutes to divide some of the baking grease over it so that it does not dry too quickly.

After 45 minutes you can take the roast out of the oven. Remove the rope and cut the roast into thin slices.
