This rouille is a typical side dish for the French Bouillabaisse, combined with fresh toasts covered in olive oil and garlic. Besides that this is a lovely mayonnaise that works really well with homemade French fries and a nice steak.

Ingredients for 2 pers.:

  • 1 red bell pepper
  • 2 egg yolks
  • saffron
  • 1 lemon
  • salt and pepper
  • sunflower oil
  • 1 tbsp French mustard

How to prepare it:

Preheat your grill. Cut the pepper into large pieces and drizzle some olive oil and sea salt over them. Grill the pepper for about 20 minutes so that the peel easily releases. Remove the pepper from the oven and allow them to cool. Remove the skin when cooled.

Boil a little water to place the saffron in, this only needs to be a small layer.

Put the egg yolks, the squeezed lemon juice, the mustard, salt, and pepper in a mixing bowl for your hand blender.

Mix everything well with the hand blender. Now start to mix quietly and add a dash of sunflower oil. Keep repeating this until the mayonnaise is airy but firm.  Now add the paprika pieces and mix them with the mayonnaise. Add some extra sunflower oil if necessary, to firmen the mayonnaise.
