Salad the Dutch way, what is that exactly? Well, not 100% sure but to my knowledge, salad with lettuce, tomatoes and eggs. Very easy but also very tasty. I’ve added the shrimps, just because I like them. Last year my friends and I went to a small island in the north of the Netherlands and we joined a shrimp fisher that fishes in the Northern Ice sea. I really loved this trip, very interesting. The shrimps are caught into huge numbers and boiled immediately on the boat into a huge bucket of hot sea water. You could try taste them after boiling and really they were delicious. Shrimps don’t need a lot of additional taste, they are good the way they are (at least if they are really fresh). That’s one of the reasons this salad is also very easy, the taste is simple but good, it doesn’t need much.

Ingredients for 4 pers.:

  • 150 gr lettuce
  • 3 eggs
  • 3 tomatoes
  • 50 gr Dutch grey shrimps
  • 2 ts mayonnaise
  • 2 ts Greek yogurt
  • salt and pepper
  • 1 lime
  • 2 spring onions

How to prepare it:

Boil the eggs for about 8 minutes until they are almost hard-boiled. In the meantime you can cut the tomatoes in half. Remove the seeds and chop the meat into small blocks. Chop the spring onion into small rings.

Put the yogurt, mayonnaise, mustard, salt and pepper in a mixing bowl. Mix all well. Squeeze the juice from the lemon and add it to the dressing. Stir again and taste if the dressing is well seasoned, it should be a bit sharp from the mustard, so add a little more if you are missing that. Once the taste is good, add the tomatoes and stir well.

Take the eggs of the stove and rinse them down with really cold water. Peel them and cut them into small parts.

Put the salad into a bowl. Divide the eggs on top. Sprinkle the dressing and the shrimps on top and finish off with some spring onions.
