Super easy and colorful salad! I make this salad quite often but never actually considered to publish it ….until people told me I had too just because it is so easy, simple and very tasty. So for you everyday use or to add some color to your fancy dinner, this easy but delicious salad!
Ingredients for 2 pers.:
- 100 gr salad
- 50 gr feta cheese
- 1 avocado
- 100 gr cherry tomatoes
- olive oil
- 1/2 tablespoon of mustard
- salt and pepper
- lemon juice
How to prepare it:
Put the salad into a serving bowl. Peel the avocado, remove the seed and cut the avocado in thin slices.
Divide the avocado onto the salad. Wash the tomatoes and cut them in quarters. Put the tomatoes on top of the avocado. Crumble the feta on top of the salad as well.
Now you can add the dressing. Take a small bowl, add the olive oil, lemon juice, mustard and some salt and pepper. Stir until you get a smooth yellow-isch dressing. Sprinkle the dressing onto the salad.
