Lovely filled salad with some grilled zucchini and feta. The herbal dressing is giving the salad some surprising flavours.
Ingredients for 2 pers.:
- ½ zucchini
- 100 gr lettuce
- 2 table spoons of yogurt
- fresh herbs like basil, parsley, chives and mint
- salt and pepper
- ½ lemon
- 1 teaspoon of mustard
- pine nuts
How to prepare it:
Cut the zucchini in half and cut the zucchini in thin slices with your mandolin. Grill it in a grilling pan.
Chop all the herbs, squeeze out the lemon juice. Put the lemon juice, the yogurt, the herbs, the mustard and some salt and pepper into a mixing bowl and stir well. Keep a bit of the mint aside.
Divide the salad in a bowl. Top it off with the zucchini. Break the feta on top. Sprinkle the dressing on top and finish with some pine nuts and the chopped mint.
