It’s time for another very tasty salad!! Feta, apple and avocado form a perfect combination and the dressing adds a little spicy flavour!

Ingredients for 4 pers.:

  • 1 avocado
  • 1 apple
  • 50 gr feta
  • 1 spring onion
  • a handful of pine nuts
  • 1 tablespoon of mustard
  • olive oil
  • lemon juice from ½ lemon
  • salt and pepper

How to prepare it:

Start by preparing the dressing. Since both the avocado and the apple can shift colors due to the exposure to air, it’s only for the color but the salad looks better if the color stays the way it is. So, take a small bowl, add the olive oil, lemon juice, mustard and some salt and pepper. Stir until you get a smooth yellow-isch dressing. It might be necessary to add some extra mustard but be careful and only ad it bit by bit. Put the dressing aside and take a bowl or a plate to put your salad on.

Peel off the apple and the avocado, take out the seeds and cut them into thin slices. Spread them across the plate. Cut the spring onion into thin rounds and sprinkle it on top of the salad. Crumble the feta on top as well. Pour the dressing on top of the salad.

Put a small frying pan on the stove. Once the pan is hot, put the pine nuts in the pan and bake for a couple of minutes until the pine nuts turn a bit browner. Sprinkle them on top. Ready to go!
