Grilled zucchini and eggplant salad
Thin grilled eggplant and zucchini slices topped with mustard dressing, feta cheese, pine nuts and fresh basil. A perfect addition to your Easter brunch. You can serve it cold and lukewarm and I must say that personally I prefer this one to be lukewarm.

Spicy salad with mango
Delicious mango salad with a twist! Make sure the mango is mellow and sweet otherwise the salad looses it touch. The sweetness of the mango goes really well with the spicy chili flakes.

Salad the Dutch way, what is that exactly? Well, not 100% sure but to my knowledge, salad with lettuce, tomatoes and eggs. Very easy but also very tasty. I’ve added the shrimps, just because I like them.

Summer salad with shrimps, avocado and cocktail sauce
It's going to be hot in the Netherlands in the coming week! Finally we'll have some summer. I don't know how you feel but I can't wait! Sweet summer evenings outside! However I do notice that I'm not really into heavy meals when it's so hot so therefore this salad tip. It's a filled salad so it should be enough for a meal especially when you add some bread and dips to it.

Nectarine and mozzarella salad
