Ingredients for 2 pers.:

  • 2 salmon fillets
  • 200 g forest mushrooms
  • 250 g potatoes
  • 1 large pointed pepper
  • 1 red onion
  • 75 g feta
  • fresh thyme
  • 1 large carrot

How to prepare it:

Preheat the oven to 200 degrees. Clean the potatoes and put them on the fire with a good layer of water. Bring to the boil and cook for 5 minutes.

Clean the carrot and cut into small pieces. Add the carrot to the boiling potatoes and cook for another 5 minutes. Then drain everything.

Meanwhile, cut the peppers into bite-sized pieces. Peel the onion and cut it into slices. Cut the mushrooms into quarters. Place a baking paper on a large oven tray. Divide the potatoes, onion, mushrooms, and peppers over it. Drizzle some olive oil, thyme, pepper, and sea salt over it. Place the tray in the oven for 15 minutes.

Remove the tray from the oven and add the carrot and salmon to the tray. Sprinkle with feta and add some olive oil, thyme, pepper, and sea salt. Put back in the oven for another 15 minutes.

Remove the tray from the oven. Enjoy!
