Mmmmm salmon rolls, delicious! I just looooove smoked salmon, you can make all kinds of dishes and variations with it. And now I came up with something nice: salmon rolls with pesto and pine nuts. During ‘leftover days’ I’ve tested this as a starter with a triptych of salmon and it was a success!! I made a combination with a salmon-avocado paste and a bruschetta with salmon. But you can also use it as a nice snack for New Years! So go nuts and show off with a salmon roll instead of fast food.

Ingredients for approx. 5 rolls:

  • 100 gr of salmon (in straight pieces)
  • 3 table spoons of crème fraiche
  • 3 table spoons of pesto
  • 40 gr of young grated cheese
  • a handfull of pine nuts

How to prepare it:

You can serve this as a snack or a starter immediately after making it but if you put it in the fridge for about one hour it will become a bit stiffer and better to serve.

Mix the pesto and crème fraiche in the blender until you get a light green paste (I use the blender to mix it, so it becomes nice and smooth). Add the grated cheese and stir the mix well with a fork. For the taste it’s nice if you keep the structure of the cheese.

Put the salmon on a cutting board. Spread the paste on top of the salmon. Stay away from the edges so the spread doesn’t come out too much when you roll up the salmon. Chop the pine nuts (just a bit) and sprinkle them on top of the paste.

Now you can carefully roll up the salmon. If you wish to serve the dish at a later stage you can roll it up in some foil and keep it in the fridge.

The last time I’ve made the salmon rolls I served them in a set of three salmon dishes; the salmon rolls, salmon and avocado mousse and a salmon-bruschetta.
