Salmon and spinach pastry package, easy to make and low on carbs and the best part: delicious!

Ingredients for 2 pers.:

  • 2 sheets of filo pastry
  • 200 g smoked salmon
  • 200 g spinach
  • olive oil
  • pine nuts
  • 1/2 red onion
  • 1 egg yolk
  • fresh dill
  • fresh parsley
  • 100 g cherry tomatoes
  • 1 mozzarella

How to prepare it:

Preheat the oven to 220 degrees.

Finely chop the spinach. Peel and chop the onion. Cut the salmon coarsely. Finely chop the herbs and cut the tomatoes over half.

Put the onion and salmon with some oil in a frying pan. Bake everything for 5 minutes. Add the spinach and let it dwindle considerably. Once the spinach has shrunk, add the herbs. Now also add the tomatoes and pine nuts. Bake everything for a few more minutes. Meanwhile, cut small cubes of mozzarella.

Now place the slices of filo pastry on a dry and clean piece of countertop. Put a little of the spinach and salmon mixture in the middle of each piece of pastry. Put some pieces of mozzarella over it and fold the filo dough into a bag.

Place the sachets in a greased baking dish. Split the egg and use the egg yolk to lubricate the sachets.

Put the bags in the oven for about 12 minutes.

Take out the bags and serve.
