Lovely smooth salmon dish with ricotta and spinach. The chili and lemon create a bit of a bite. Very easy to make and a little party on your plate!

Ingredients for 2 pers.:

  • 2 salmon fillets
  • 200 gr spinach
  • 100 gr ricotta cheese
  • salt and pepper
  • 1 lemon
  • pinenuts
  • chili flakes
  • olive oil

How to prepare it:

Pre-heat your oven to 200 degrees, take a piece of tin foil for each salmon fillet. Use some olive oil to grease the tin foil.

Grate the lemon and squeeze out the juice.

Put the ricotta, spinach, a handful of pine nuts, the lemon juice, some chili flakes and a bit of salt and pepper in a blender or mixing bowl for the food processor. Mix everything well till you have a smooth, thicker sauce.

 

Put the salmon filets on top of the foil. Sprinkle a bit of salt and pepper on both sides. Spread some of the ricotta-spinach sauce on top. Finish off with some lemon grates and pine nuts.

Close the tin foil and bake them in the oven for 25 minutes.
