Lovely, crunchy salmon. I love salmon but sometimes it is just heavy and a bit boring. This crust is easy to make and takes away all the boringness, the herbs and the lemon together in the crunchy crust add just that little bit that a piece of salmon needs. Adding a smooth risotto with lemon and truffle-oil( Risotto with lemon and truffle oil) will match perfectly.

Ingredients for 2 pers.:

  • 2 salmon fillets
  • 1 lemon
  • fresh dill
  • fresh parsley
  • fresh chives
  • salt and pepper
  • olive oil
  • breadcrumbs

How to prepare it:

Preheat the oven to 200 degrees.

Finely chop all the herbs and put them in a bowl. Add a drizzle of olive oil and some salt and pepper. Grate the zest of the lemon. And chop it finely, add the lemon zest to the herbs. Stir well and add 2 tablespoons of breadcrumbs.

Cover the top of the salmon with the herbs, press well. Put a bit of oil in a oven dish and place the salmon in the dish. Put the salmon in the oven for 15 to 20 minutes, depending on the size and thickness of the salmon fillets.
