Easy but delicious salmon oven dish. Super easy to make and if you do not have any time, just use pesto from the grocery store. This is almost just as nice!

Ingredients for 2 pers.:

  • 2 salmon fillets
  • 15 gr fresh basil
  • 1 garlic clove
  • handful of pine nuts
  • ½ lime
  • 40 gr parmesan cheese
  • olive oil
  • pepper and salt
  • parmesan cheese (bigger pieces)

How to prepare it:

Pre-heat your oven to 200 degrees, take a piece of tin foil for each salmon fillet. Use some olive oil to grease the tin foil.

Start by making the pesto. Take the leaves of the basil and put them in the blender. Strip the garlic and cut out the root. Squeeze the garlic over the olives. Add the pine nuts. Squeeze out the juice of the lemon and add the juice to the blender. Add a sip olive oil and mash everything. Once a nice paste has emerged you can add the parmesan cheese and some pepper, mix everything once more

Put the salmon filets on top of the foil. Sprinkle a bit of salt and pepper on both sides. Grease the pesto on top of the salmon and sprinkle some pine nuts and Parmesan cheese on top.

Close the tin foil and bake them in the oven for 25 minutes.
