Carrot and dill risotto
The risotto is completely vegetarian, so if you wish to serve a vegetarian dish, just leave the shrimps behind. The risotto is nice an creamy with some tomatoes, carrots and fresh dill.

Filled eggplant; perfect vegetarian main dish
Lovely vegetarian main or side dish. Easy and full of flavours, just very important that the eggplant is really soft, therefore it takes some oven time. But it is worth the wait!

Gratinated cauliflower
I love cauliflower and cheese sauce! Ever since I was a kid it has been my all-time favorite. The only thing is that your plate is just very boring colour wise. If you prefer you can serve the cheese sauce separately however I just like to create that layer of grilled cheese sauce.

Mashed potatoes with leek and mustard
Lovely, slightly spicy mashed potatoes dish. Even though we are having an Indian summer this week in the Netherlands it is time for new mashed potato dishes since the fall is not far away anymore. This dish with leek and spicy mustard is already reminding me of the autumn flavours. Good match with a piece of chicken in mustard sauce.
