Sometimes you are just not in the mood or don't have the time to cook, but take-away isn't really what you want to eat... what do you do? Well, you can quickly make this vegetarian rice dish. It's really easy, quick, very tasteful and it's healthy as well. I was a bit busy myself lately to really take the time to cook, so this dish was my lifesaver.

Vegetarian side dish that also works well as a starter or with all kinds of different tapa's. A dish with tomatoes, basil and pine nuts is always a success but now you also have the addition of the portobello and that really adds a nice switch to it.
Zucchini, the green vegetable that looks a bit like cucumber but tastes completely different. The real zucchini taste comes out when you heat the zucchini and add a bit of olive oil on top.

Finally!! The asparagus are back in season again! I’m a huge fan! Preferably I’ll eat them in the most traditional way; boiled with nutmeg, dairy butter, eggs, potatoes and smoked salmon (or ham for my boyfriend) or otherwise as a creamy soup.
