Make your own quick and easy salmon with a crunchy herbal crust!

Ingredients for 2 pers.:

  • 2 salmon fillets
  • fresh herbs such as parsley, dill, basil
  • 1 lime
  • 50 gr anchovies
  • 50 g pistachios
  • breadcrumbs
  • fresh pepper

How to prepare it:

Preheat your oven to 220 degrees.

Remove the hard stems from the herbs and put all the herbs with the anchovies and pistachios in a food processor or blender.

Put a little olive oil in a baking dish and place the salmon fillets on it. If you have a large piece, it is easier to cut it into the desired separate portions.

Sprinkle some pepper over the salmon.

Blend the herbs, anchovies, nuts, and some olive oil into a soft spread. Stir in a little breadcrumb. Cover the fish with a thick layer of the herbal spread.

Put the fish in the oven for about 30 minutes. Put some aluminium foil over it for the first 20 minutes and remove after 20 minutes.
