Spinach pie….. I remember this was always a huge challenge… lovely and very tasty but challenging to get it right! It was always too wet or too dry. But in the end the taste matters right, and that was always really good. I do not remember the recipe so I created my own but I did steal the idea of my mom of putting the brie on top. This one was delicious and had a perfect structure. Definitely worth making!!!

Ingredients for 4 pers.:

  • 400 gr fresh spinach
  • 200 gr mushrooms
  • 1 piece of brie
  • pine nuts
  • 250 ml cooking cream
  • 1 onion
  • 4 eggs
  • salt and pepper
  • chili flakes
  • 200 gr filo dough

How to prepare it:

Pre-heat your oven to 220 degrees. Peel the skin of onion and fine slice the onion. Cut the mushrooms into thin slices. Put a pan on the stove, add a bit of butter and oil. Once the butter is hot, add the onions and the mushrooms. Fry them for about 10 minutes. In the meantime, you can cut the spinach. Add the spinach to the mushrooms (after the before mentioned 10 minutes).

Stir well whilst the spinach is getting hot and starts shrinking. Add the pine nuts after 5 minutes.

Turn the gas off.

Get yourself a mixing bowl, add the eggs, the cooking cream a bit of salt and pepper and the chili flakes.

Stir well.

Use a spring shape to bake the pie. Grease some butter on the spring shape and use the filo dough to create the skin of the pie.

Add the mushroom-mixture through the egg-mixture and stir well. Pour the mixture in the pie shape.

Cut the brie into thin slices, cover the pie with the brie.

Bake the pie into the oven in about 25-30 minutes.
