You can prep this starter the way I did (as a starter) or as a regular bruchetta. Serving it with other bruchettas. I prepped this bruchetta just a bit different as the other ones by grilling all of the ingredients together but of course you can also use your oven for the grilling. I love the freshness and pure taste of the ingredients in this dish.

Ingredients for 2 pers.:

  • 1 ciabatta
  • 1 avocado
  • 1 lemon
  • cherry tomatoes
  • 1 clove of garlic
  • olive oil
  • salt and pepper

How to prepare it:

Start by baking the bread in the oven based on the instructions of the package. Have it cool down and once it’s cold enough cut it into nice slim slices. Put the slices on a plate. You can grill the bread at the same time as the avocado and the shrimps. Pre-heat the grill. I have a small grill I use for this kind of preparations.

Put some olive oil in a small bowl, add crushed garlic of the garlic clove (cut the garlic in half, take out the root and squeeze it into the oil) and set it aside so that the garlic can really get into the olive oil.

Cut the avocado into thin slices. Sprinkle some salt, pepper and lemon juice over the avocado and the shrimps. Put both on the grill as soon as it’s hot.

Use the garlic oil on top of the ciabatta and put the bread on the grill next to the shrimps and the avocado. Grill all ingredients for about 10 minutes or until the grill markings are visible.

Cut the tomatoes in quarters.

Take the breads of the grill and put them on the plates. If you wish to make nice bruchettas you need to put all ingredients nicely on top. To use this dish as a starter, you can be less structured (see the picture).

Put the shrimps, tomatoes and avocado slices on top of the breads and serve!
