Salmon stewed in a creamy white wine and spinach sauce. Delicious with just some pieces of nice bread to use to finish off the sauce. 🙂

Ingredients for 2 pers.:

  • 2 salmon filets
  • 200 gr fresh spinach
  • fresh dill
  • 1 onion
  • 1 lemon
  • chili flakes
  • salt and pepper
  • olive oil
  • mustard
  • 150 ml crème fraiche
  • 200 ml white wine

How to prepare it:

Season the salmon with some salt and pepper. Place a deep pan on the stove and heat up some butter. Place the salmon in the middle of the pan with the skin side to the top and bale for a couple of minutes till the salmon colors slights brown.

Take the pieces salmon out of the pan and put them aside for a moment. Leave the pan on the stove.

Peel and fine slice the onion. Grate the skin of the lemon and chop it. Squeeze the juice out of the lemon. Chop the dill and cut the spinach.

Put the onion and some chili flakes into the pan and fry for 2 minutes, add the wine and bring the wine to a boiling point. Let the wine vaporize for 50 %. Add the crème fraiche, the lemon juice and the mustard. Stir well till you have a smooth, creamy sauce. Place the salmon back into the pan with the sauce and place the skinned side on the bottom. Add some fresh dill, some salt and pepper and stir around the salmon. Finally add the spinach. Let the spinach shrink.

Take the salmon out of the pan, sprinkle some lemon grates and fresh dill over the salmon and add a scoop of the spinach sauce. Enjoy.
