Easy stir-fry dish in case you have a busy day but still want to eat healthy, the ginger and lemon grass add special flavours!

Ingredients for 2 pers.:

  • 200 gr rice-stick noodles
  • 200 gr shrimps
  • 100 gr sugarsnaps
  • 100 gr cherry tomatoes
  • 10 gr fresh ginger
  • 1 piece of lemongrass
  • 1 spring onion
  • 1 clove of garlic
  • soy sauce
  • pepper

How to prepare it:

Cut the lemongrass into pieces of 2 cm. Put a pan with water on the stove and add 2 pieces of the lemongrass.  Bring the water to a boiling point and boil the noodles according to the package. Put a second pan with water on the stove, again add two pieces of the lemon grass, bring the water to boil and add the sugar snaps. Boil them for about 7 minutes.

Rinse down both pans and put the noodles and the sugar snaps on the side for a moment.

Put a frying pan on the stove and add a bit of olive oil. Peel the garlic, cut it in half, remove the root and squeeze it out in the pan. Add the shrimps and grate the ginger over the shrimps. Season with a bit of pepper.  Fry the shrimps for approx.. 10 min. Stir regularly. Add the sugar snaps to the shrimps. Cut the tomatoes in half and add them to the shrimps as well. Fry for 2 minutes before adding the noodles. Finish off with some soy sauce, pepper and oil.

Easy, quick and healthy after sporting dish!
